Christian Etienne gained his experience in Paris, in establishments as famous as the Ritz and the Intercontinental.
On returning to Avignon, his home town, he opened the restaurant at the foot of the Palais des Papes which was going to make his reputation. The secret of his success: cuisine which is just as inventive as it is demanding, which rediscovers the gourmet heritage of Provence and takes original advantage of local produce.
A Michelin-star Chef, admired by critics and acknowledged by his peers, for the past twenty years he has been an active member of the prestigious association of Master Chefs of France, which includes among its members some of the leading lights of French gastronomy. Enthusiastic, generous and untiring, he also teaches at the hotel and catering college and publishes cook books such as “The Magic of Truffles: Christian Etienne’s favourite recipes”.
He has always been wild about truffles and it was with great enthusiasm that he undertook the Truffières de Rabasse adventure.
