• What is the season for truffles?

Thanks to Truffières de Rabasse, truffles can be enjoyed all the year round! But, it is in the winter when Tuber melanosporum is harvested and when it is possible to buy fresh truffles.
The famous truffles markets of Provence are held between the end of November and the end of March. However, we suggest that you wait until the middle of December to buy your fresh truffles: they will be perfectly ripe.

• Are truffles an expensive product?

The “black diamond” is a precious product and its cost per kilo may seem high.
However, remember that just a few grams of truffles are enough to perfume a dish, especially if the truffle is ripe and has been carefully selected (like the ones we use for our truffle specialties which offer a maximum of pleasure for a minimum of product).

• How should truffles be stored?

Fresh truffles can be kept for a maximum of 10 days in the fridge, placed on a bed of rice or absorbent paper, in an airtight jar. And, for a few months in the freezer, placed in an airtight jar, or wrapped in Clingfilm. However, avoid keeping them in oil or in alcohol (a guaranteed breeding ground for bacteria!).
Preserved truffles can be kept for a long time, but must be consumed within 2 or 3 days after being opened and must be stored in a cool place.

• What goes well with truffles?

The great classics never go out of fashion: truffle omelette, scrambled eggs with truffles, truffle salad... But, truffles go well with an infinite number of dishes, from aperitifs to desserts, including starters, meats, fish and vegetables...
