1. Begin as you would for homemade mayonnaise: In a small, deep bowl, mix together the egg yolk, mustard, salt, pepper, capers and onions.
2. Stir in the Truffle.
3. Add oil, drop by drop, while constantly stirring. Whisk vigorously with a fork, adding oil until the mixture holds up in stiff peaks.
My advice: Sandwich idea: Slice a baguette in half and spread both sides with Truffled Tartar Sauce. Fill the sandwich with smoked salmon or smoked trout. It is a delicious change! |
