1 Peel the apples. Grate them into a large bowl, adding sugar as you go along. Squeeze lemon juice over them to avoid browning. Stir in the Black Truffles cut into small pieces.
2 Mix very well. Beat the eggs, then mix them into the apple mixture.
3 Use this mixture to make an omelet, with a little bit of butter in the pan.
My advice: This is terrific with a scoop of Truffled ice cream! |
