Truffle Tartar Sauce

Truffières de Rabasse Ingredients

Other ingredient:

2 ½-3 tablespoons (25-40g) Black Truffle by Truffieres de Rabasse
1 tablespoon Truffle Mustard by Truffieres de Rabasse

1 egg yolk
Freshly ground epper
2 tablespoons (20g) minced capers
2 tablespoons (20g) minced onion
1 cup grapeseed oil, as needed
Sea salt, Pepper

1. Begin as you would for homemade mayonnaise: In a small, deep bowl, mix together the egg yolk, mustard, salt, pepper, capers and onions.

2. Stir in the Truffle.

3. Add oil, drop by drop, while constantly stirring. Whisk vigorously with a fork, adding oil until the mixture holds up in stiff peaks.

My advice: Sandwich idea: Slice a baguette in half and spread both sides with Truffled Tartar Sauce. Fill the sandwich with smoked salmon or smoked trout. It is a delicious change!
